Easy-Peasy Chicken Pot Pie

Short on time, but have staple ingredients in your pantry and freezer? Just pick up a rotisserie chicken on your way home and dinner will be ready in under an hour with our Easy-Peasy Chicken Pot Pie Recipe!

INGREDIENTS
  • Pre-Made Refrigerated Pie Crust
  • Rotisserie Chicken
  • 1 Can of Cream of Corn Soup
  • ½ Bag of Frozen Vegetables (Green Beans, Corn, Carrots, Peas, Etc.)
  • ½ Can of Cream of Chicken Soup
  • Salt & Pepper (to Taste)
  • Leaves from a Few Sprigs Fresh Thyme

DIRECTIONS

Preheat oven to 400 degrees. Lay the first pie crust in the pie pan, and push sides up to make a bowl-like shape.

Put the rest of the ingredients in a big mixing bowl, adding the rotisserie chicken gradually as you rip the meat apart with your hands into bite-size pieces. Mix well. Spread the mixture into the pie crust evenly before putting the top layer of pie crust on top. Press the edges of the crust together and pinch around the entire pie. Finally, make slits in the top of the crust to vent the steam and place in the oven. Bake for at least 45 minutes, until the center is nice and piping hot. Enjoy!
